Beet Goat Cheese Hummus

INGREDIENTS
  • 1 baseball-sized red beet (about 6 ounces), scrubbed
  • 1 15½-ounce can chickpeas, rinsed, drained
  • ⅓ cup tahini, well mixed
  • ¼ cup fresh lemon juice
  • ¼ cup Goat Cheese
  • 1 garlic clove, finely grated or smashed to a paste with flat side of knife on cutting board
  • 1 teaspoon salt
  • 10 cranks freshly ground black pepper
  • ¼ teaspoon ground coriander
PREPARATION Preheat oven to 425°.

Matcha Coconut Smoothie

SERVES 1 INGREDIENTS:
  • 1 frozen banana
  • 1/2 cup of ice
  • 1 kiwi or 1 cup chopped mango
  • 1 tsp bee pollen (optional)
  • 2 Kale leaves, raw
  • 1 cup spinach, raw
  • 1 tsp freshly grated ginger
  • 1 tsp matcha, powdered green tea
  • 1 cup coconut water
INSTRUCTIONS: Place all ingredients into a blender. Blend until smooth. Enjoy!

  • 3 Tbsp whey protein (almond meal flour for gluten free)
  • 1 tsp steel cut oats
  • 1 large egg, beaten
  • 2 Tbsp raw cacao powder

Boozy Lemon Watermelon Slushie

INGREDIENTS
  • 4 cups cubed frozen watermelon
  • 2 cups fresh squeezed lemon juice
  • 4 tbs agave syrup
  • 4 cups ice
  • 6 shots of vodka
DIRECTIONSCombine all ingredients in a blender and blend till smooth.   

Mushroom Miso Soup

INGREDIENTS
  • 4 cups organic low sodium chicken broth or water (if vegan)
  • 2 tablespoons mellow white miso
  • 2 cups fresh mushrooms
  • 1 large yellow or red onion, diced
  • 2 cloves garlic, pressed or minced
  • 1.5 teaspoons grated ginger
  • 1 cups coarsely chopped collard greens
  • 2 tablespoons coconut aminos
  • ¼ cup chopped scallions

Mixed Berry Chia Jam

INGREDIENTS:
  • 1/3 pound fresh strawberries, washed, hulled, and sliced
  • 1/3 pound fresh blueberries, washed
  • 1/3 pound fresh raspberries, washed
  • 1 tbsp lemon juice
  • 2 tbsp honey

Protein Packed Banana Bread

INGREDIENTS:
  • 1 ¼ cups all-purpose whole grain flour (swap for gluten free flour if desired)
  • ¾ cup grass fed whey vanilla protein powder – if vegan simply swap this for another ¾ cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ cup organic unsalted Grass Fed Butter OR coconut oil if vegan, melted

Quick & Easy Chicken Chili

SERVES 4 INGREDIENTS:
  • 1 tbsp coconut oil for cooking
